Product Highlight- Hodgson Mill Insta-Bake Whole Wheat Mix
OK, this is the greatest baking mix, EVER. I just made my family some pancakes that I am calling “Valentine Pancakes” and I swear the pancakes were the best I have ever had. I must admit, I was surprised that they were so delicious since they were made with whole wheat mix instead of the bleached kind, but my goodness they were Fab! So here is my recipe…I tweaked the Hodgson recipe and made up my own.
2 cups Hodgson Mill Insta-Bake Baking Mix
1 2/3 cup Vanilla Soy Milk
1/4 cup Canola Oil
1/4 tsp. Almond Extract*
Frozen Strawberries, roughly 8 to 12
Extra Oil for Griddle
Take strawberries out of the freezer and let them sit on the counter for about 5 to 10 minutes. Slice strawberries while still frozen. set aside.
Lightly oil griddle pan by brushing oil with cooking brush. Heat griddle pan to 350 (or medium heat). While the pan is heating, place baking mix in mixing bowl and create a well in the center. Add eggs to the mix, placing them in the well. Add soy milk, canola oil, and almond extract. Mix until blended, but don’t over mix!
Pour mix into a large measuring cup with spout. Pour 1/3 cup of mix for each pancake (or however much you like if you like larger or smaller pancakes). Sprinkle strawberries on top of pancakes. After 3 or 4 minutes, (when bubbles start to form or when edges look dry), flip the pancake. Cook until golden brown.
Serve with a pat of butter and warmed maple syrup.

NOTE: Almond extract can be found in the baking section of your grocery store and is great to have on hand. You can use it in many recipes and it always adds a little “sweet kick”. I add it to breads, biscuits, cakes, cookies, you name it. You can use it instead of vanilla extract in many recipes. Definitely worth having in the pantry.
